Cinnamon Apple Baked Oatmeal

Welcome, October! While autumn arrived a few weeks ago, the cooler weather has just recently arrived. We’ve had temps down around 50 each morning while the afternoon temps are making it to the mid-70s. With low humidity, the days are just glorious! I can easily say that this is my favorite time of year! The leaves are slowly beginning their change to gorgeous yellows and oranges.

I have been enjoying some recipes found in the new THM cookbook, Trim Healthy Table. I was looking through it the other day wanting something new for breakfast. I found one for baked oatmeal, but realized that I could personalize it by making a few changes. I love anything apple and pumpkin this time of year, and since we still have some apples from an orchard we went to a few weeks ago, I decided to make an apple baked oatmeal dish. I was totally amazed at how moist it was! Absolutely delicious!

  • 4 large eggs
  • 2 c. low-carb flour blend (I use my own mix of oat flour; almond flour; and ground flax)
  • 1-1/2 c. almond milk
  • 3 tbsp. pyure
  • 2 heaping tsp. ground cinnamon
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. caramel flavoring
  • 1 medium apple, peeled and grated
  • plain Greek yogurt

Lightly coat a 9×9 baking pan with coconut oil. Whisk the eggs well in a large bowl. Add all the other ingredients except for the apple and mix well. Add the grated apple and stir until just mixed. Pour into greased baking pan and bake at 350 degrees for about 25-30 minutes or until a toothpick comes out clean.  Cut into 6 pieces. Serve each with Greek yogurt or a squirt of canned whipped topping!

Family Happenings and Blueberry Scones

It’s been a crazy last few weeks which has contributed to my negligence in writing another blog post! I’ve been mentally writing this several days, and have really tried to get it here on the blog. This is the second time that I have sat at the computer to try to complete a post. I keep getting interrupted! You’d think that with just 2 of us in the house the majority of the time that I should be able to do this without interruption.  Guess I’m just not doing it at the right time. Maybe now I can get it done!  🙂

Here is what’s been happening with the family.

For Father’s Day this year I decided to replace our old tried and true automatic drip coffee maker. The old one was a gift to us for our wedding 29 years ago! I think that it is the last of the small-appliance-wedding-gifts that we received. I have burned out more crockpots, toasters, and hand mixers than I can count. The large appliances are are anywhere from 15 years to 25 years old, but the coffee pot has stuck around for 29! But not the carafe! We’ve replaced that more times than can be counted, too!

My sweet Little Man is rapidly approaching his first birthday! His latest accomplishment is crawling!! Time for my girl and her man to baby-proof the house!

Little Miss Mia is loving summer by playing outside in her pool and by jumping on the trampoline. She is doing pretty well as a big sister to sweet little Gracie Mae! Both the girls and their mommy are adjusting to life without Daddy for awhile as he serves our country. We pray daily for him while he is gone.

We are just 18 days out from the Big Day for my officer and his lady! I have my dress and shoes; the venue for the rehearsal dinner is reserved and menu chosen. I’m working on the center pieces for the tables and finalizing the number for the caterer. I can’t believe that this wedding is just around the corner!!

For a few weeks I found myself falling off the THM wagon and realized that I was just not feeling well. Three weeks ago I got back on that wagon and have worked hard to keep the bad carbs out of my diet. It always amazes me how much better I feel when I eat the THM way!

I discovered this recipe not long ago and knew that I had to give it a try. The original recipe called for strawberries, but last week a friend gave me lots of blueberries! Using blueberries instead of the strawberries made a wonderful scone! Try it yourself using any of the berries. You will be glad that you did!

Easter Weekend and Berry Breakfast Crisp

Hello, everyone! I am finally taking the time to sit down and write a new post…this time including a new recipe!

But first—Easter weekend! I was thrilled that Barbi and her sweet little family were able to drive here for Easter! They not only got to spend time with us all, but they got to meet Baby Gracie! The only disappointing part of the weekend was that my 2Lt was not able to be here since he is still half-way across the country in training!

This morning I decided to have something different for breakfast than my usual sunny-side up eggs and fruit. I have been trying hard to get back on track with eating in a healthy manner since the guys brought in lots of sweets and other carbs over the weekend. And of course, I served our traditional Pavlova for Easter dessert!

This recipe makes one serving. It calls for baking it in the oven, but I used the microwave for about one minute. Either way is just fine.

  • 1 cup mixed berries (frozen or fresh)
  • 3 tbsp. low-carb flour blend (I used my own flour blend of oat, almond, and flax)
  • 1 tbsp. unsweetened coconut flakes
  • 1/2 tsp. baking powder
  • dash of salt
  • 1 tbsp. sweetener (I used Pyure)
  • 1/2 scoop protein powder
  • 1-1/2 tbsp. coconut oil, melted

Place the berries in the bottom of a small baking dish. Mix remaining dry ingredients in a small bowl and then stir in coconut oil until it is a crumbly mixture. Sprinkle over the top of the fruit. Bake at 375 degrees for about 25 minutes, or put into microwave for about one minute or until the berries burst.

Serve topped with about 1/4 cup Greek yogurt.

Chocolate Smoothie with a Twist

Happy New Year and welcome to 2017! I know, I know…I am 12 days late on that greeting, but at least I’m here now writing a new post!

Last weekend we experienced winter. And it is now over and spring is here, at least for a few days. We had ice, snow, and sub-freezing temperatures for 3 days last week. Today, we are pushing 72 degrees! Tomorrow should be the same as today; Saturday will drop down into the 50s, but then we should have about a week or so with temps in the mid-60s every day! I just love life in the south!

I sort of fell off the proper eating path over the holidays when the hubby and others who shall be nameless brought delicious tasting, but oh-so-bad-for-you foods into the house! I am working hard at getting the sugars out of my system and eating right once again.

Although I was brought up in the south, there are some southern foods that I just never got a taste for. Black-eyed peas and collard greens make a traditional New Year’s Day meal, but not in my house! Okra is another southern staple that I just never enjoyed. However, now that I am trying to eat the Trim Healthy Mama way, I have discovered the health benefits of this southern veggie. If you are like me and need a little convincing that okra really is good for you, then read this article. You will be impressed!

The new THM cookbook has a few recipes in it using okra. I have made the brownies with it and was very impressed. Last week I discovered the chocolate smoothie! If you have the cookbook, you will find the recipe on page 415. Today I added a few drops of peppermint essential oil. Oh, my word! Ya’ll, this is amazing! If you didn’t know that there is a cup of okra in the smoothie, you would never guess it! I like it so much better with the peppermint than without!

Since I did change up the recipe some, I will share it with you here.

  • 1 c. water
  • 1 c. frozen, diced okra (I actually thawed mine some.)
  • 2 tbsp unsweetened cocoa powder
  • 2-1/2 tbsp. Pyure sweetener
  • 1 tsp. coconut oil, melted
  • 3-4 drops peppermint essential oil
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 10 ice cubes
  • 1 scoop chocolate protein powder

Put everything in the blender except the ice and protein powder. I added the peppermint oil to the coconut oil first, and then added it to the remaining ingredients. Blend well…very well! Add the ice and blend again. Add the protein powder last and blend one more time.

Give it a try! You won’t be disappointed!

Chocolate Peanut Butter Cup Overnight Oatmeal

I’m back!!! I am finally taking the time to share a new recipe with you! Sorry it’s been so long…no real excuses…just haven’t done it. Oh, well! Here I am!

First a few updates on the family…I miss this little dude terribly! I hate that he and his parents live so far away!! I can’t wait to see him and his mommy at Thanksgiving! Grammy will do a whole lot of spoiling!!

I also miss this “baby!” He’s been on the other side of the world for over 3 months now, and could possibly be home THIS weekend!!! I can not wait!!! I know that a 3-month deployment is not considered very long, but in the eyes of a mama, it is terribly long!

This little munchkin is growing up so fast! I love that she lives nearby and that I can see her almost everyday! She loves trying to say new words and is quite the little yack-back.

We got the news on Saturday that my dear Aunt Margie passed away out in South Dakota. She had recently turned 88 years old. Although her hubby was not much of a traveler, he didn’t mind if Aunt Margie traveled, so she and my Aunt Kay would often drive across the country to come south and visit with my mom, their older sister. I am so thankful for those visits! My children have wonderful memories of visits with their great-aunt! Aunt Margie was the 8th of 10 children born to my grandparents. I can’t believe that only the youngest 2 are left! I miss all my aunts and uncles, and of course, my own mom who passed away 9 years ago next week. They were a special bunch and had great love not only for their own families, but also for all the nieces and nephews. This picture is of Aunt Margie, Uncle Jim and me at a family reunion back in 2008.

Last week I had a most embarrassing moment when I locked not only my keys but also my phone and wallet inside my van at the gas station! Now, I’ve been driving since I was 15…got my “Cinderella License” at that time and could drive by myself from sunup to sundown. In all these years I have never locked my keys in my car…until last week. Thanks to some extended Citadel family members, I was able to get the situation taken care of…but that’s another story!

Now to the recipe! I love oatmeal on cold mornings, and we have finally gotten cooler mornings here in the south. It has taken several weeks longer than normal, but I’m happy that it is finally here!

This recipe is just amazing! And if you forget to make it the night before, you can easily cook it in the microwave in the morning. It makes a great E breakfast if you follow THM.

1/2 c. old fashioned oats

1-1/2 tbsp. cocoa powder

2 tbsp. peanut butter powder

1/8 tsp. salt

2 tbsp. sweetener (I like Pyure)

2/3 c. almond milk

1/3 c. plain Greek yogurt

Mix the dry ingredients in a medium-sized cereal bowl. Add the almond milk and yogurt and stir well. Feel free to add a little more almond milk if the mixture looks like it is too dry. Cover and put in the fridge overnight.

In the morning, stir the oatmeal and zap it in the microwave to warm it up. Add more almond milk if needed or top with low-carb spray whipped cream. Enjoy!

Breakfast Casserole, THM style!

Things have been pretty quiet around here this week. My little grand darling and her parents are away for a week of family vacation with her other grandparents. I miss that little girl like crazy!! I can’t believe she is almost 2 years old! It won’t be long until she is in “First Day of School” pictures like I’ve been seeing on my Face Book news feed this week. Those children are so adorable!

This is also the time of year for colleges to begin again. It is hard for me to believe that my Citadel grad is starting his second year out of college! I have remained a member of some of the Citadel parent pages on Face Book in order to encourage parents who are new to the 4th class system of a military college. Back when Ben was a knob, I wrote this blog post about mailing packages to him. It is my most viewed post…over 2500 clicks on that post alone! I am amazed!

And of course, my heart misses my newest bundle of love! I can’t wait to see him (and his mommy!) again in September!

Last week I saw this recipe come through my news feed and realized that I could make it low-carb with no trouble at all. The original recipe called for 1 lb. of hash brown potatoes. I switched that out for finely chopped cauliflower, and it worked great! The hubby even took seconds! This recipe makes 6 large portions.

Mix these ingredients together in a mixing bowl.

  • 1 lb. chopped cauliflower
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. paprika

Cut  7 slices of bacon into bite-sized pieces and fry them in a skillet. Drain on paper towels.

Mix these ingredients together in another bowl.

  • 6-7 eggs
  • 1/3 c. heavy whipping cream
  • the fried bacon pieces

Lightly oil a baking pan. I used one that is 7 x 11 inches. Press the cauliflower mixture into the pan on the bottom and part way up the sides. Pour the egg mixture on top of the cauliflower. Sprinkle with grated cheddar cheese and 1 tbsp of  chopped, fresh chives.

Bake at 350* for about 40 minutes or until the eggs are firm. Serve with a spoonful of fresh salsa. Enjoy!

 

Candy Bar Smoothie

I came across a recipe the other day for a milkshake similar to the smoothie recipe that I am going to share here. It is winter and still cold even here in the south, so I don’t care to drink too many milkshakes!  I tried this recipe this morning making it thinner like a smoothie. It was the perfect mid-morning snack since I ate an early breakfast today and  needed something to hold me over until lunch.

1/2 c. low fat cottage cheese (or plain Greek yogurt)

1 scoop chocolate protein powder

1 tbsp. sweetener  (Might need more if using Greek yogurt)

3/4 c. almond milk

1 tbsp. cocoa powder

2 tbsp. peanut butter flour

1/2 to 3/4 tsp. caramel flavoring

Put all the ingredients into a blender and blend until smooth! Adjust the taste to your liking by adding more peanut flour, cocoa powder, or caramel flavoring.

If you prefer your drink thicker like a milkshake, add about 7-10 ice cubes to the mix and blend well.

Winter Weather and Low-Carb Cinnamon Rolls

Happy Monday, everyone! I can’t believe that we are on the last full week of January already! Time is flying by!

We enjoyed a bit of winter weather on Friday and Saturday. Now, I realize that we didn’t get the 14-38 inches of snow that our northern friends received, but here in the south, a few inches is a big deal. New-fallen snow seems to put everyone in a good mood, and what’s great about living in the south is that we can enjoy our few inches of snow and a day off of school or work and then go right back to our temperatures of 50-60 degrees within a day or two! We can enjoy the beauty of new, clean snow without the trials that come with northern snows!

The one thing that we have missed the most while trying to eat a low-carb diet is cinnamon rolls or coffee cake. My sons reminded me of this over the weekend! I used to make sourdough coffee cake every Sunday morning. However, since it just doesn’t suit our eating plan, and we would eat way too much of it, I don’t make it at all any more.

I saw this recipe over on the THM Facebook page the other day and decided to give it a try. We all enjoyed it! Using mozzarella cheese in the dough is absolutely brilliant! The guys thought that the icing needed to be a little bit sweeter, so when I make it again I will add more truvia. I love the way Briana made brown sugar using a little bit of molasses. I think that I would double that for this recipe next time.

Sweet Potatoes for Breakfast!

We in the south have survived the major flooding that hit our state over the weekend! Thankfully, it was not as bad in our area as it was and still is in the midlands and low country. Tim had to empty the rain gauge during the course of the weekend, and he estimates that we got between 7 and 8 inches of rain! That’s a lot of rain in just one weekend! Although we did have some water seep into the basement, it was not a lot and didn’t do damage. All our trees are still standing, and we never lost our electricity. We have much to be thankful for!

For our garden this year, the hubby decided to build raised beds. He also decided to make his own soil so that he would have just the right nutrients for the plants he was trying to grow. For the most part his experiment worked well, but he will probably make a few changes for next year’s garden. Last evening the hubby began digging up his sweet potato crop. He had one entire bed with just sweet potatoes in it. Here is what he dug last night.

It is a good thing that my favorite grocery store was out of sweet potatoes last week when I did my shopping! We won’t be buying these any time soon! We were both amazed at not only the number of sweet potatoes that he got, but also at the size of some of them. As you can see here, my ruler is 13 inches long, and the potato is longer than that!

About a year ago, Tim was searching for recipes that would be ok on our THM eating plan. He came across this one for a Sausage & Sweet Potato Breakfast Frittata. I have made it a few times for him, and he seems to like it. As often is the case for me, I changed things from the basic recipe.  Take a peek at the original recipe. Then read what I did to change it! It is a good way to use up any leftover baked sweets.

Changes:

I cut back on the amounts of ingredients since I didn’t need to serve 12. I made mine to serve 4-6.

I used sharp cheddar cheese instead of mild cheddar. I also used whole eggs…about 3 of them, well-beaten.

I used 1/2 pound of turkey sausage, and omitted the chives.  For the sweet potatoes, I used leftover baked sweets that I had from dinner the night before.

For the process, I sauteed the onions and peppers and browned the sausage, then added the eggs, cheese, salt and pepper. As it cooked a few minutes on the stove top, I peeled the potatoes and cut them into one-inch squares. I dropped the pieces on top of the mixture and then proceeded with the recipe by baking it in the oven.

*If you are in a hurry and don’t have time to bake it in the oven, keep it all in the skillet, cover and turn the heat way down for about 5-7 minutes. It tastes just as good!
